Strawberry Cheesecake Fat Bombs

Ingredients:

  • 8 oz cream cheese (softened)
  • 1/4 cup butter (softened)
  • 1/4 cup coconut oil (melted)
  • 1/4 cup powdered erythritol (or sweetener of your choice)
  • 1/2 cup freeze-dried strawberries (crushed into powder)
  • 1/2 tsp vanilla extract
  • Pinch of salt

Method:

  1. Prep Your Ingredients:

    • Make sure your cream cheese and butter are softened to room temperature.
    • If you don’t have strawberry powder, you can crush freeze-dried strawberries into a fine powder using a food processor or blender.
  2. Blend the Base:

    • In a mixing bowl, combine the softened cream cheese, softened butter, and melted coconut oil.
    • Using an electric mixer or a whisk, blend the ingredients until smooth and creamy.
  3. Add Sweetener & Flavor:

    • Add the powdered erythritol (or any sweetener you prefer), the vanilla extract, and a pinch of salt.
    • Then, add the crushed freeze-dried strawberry powder and mix thoroughly until all ingredients are fully incorporated and the mixture has a smooth, pinkish color.
  4. Shape the Fat Bombs:

    • Line a baking sheet with parchment paper or use silicone molds for easy removal.
    • Scoop the mixture using a spoon or small cookie scoop and roll them into balls. You can also press the mixture into silicone molds if you prefer a more uniform shape.
    • You should end up with about 12-14 fat bombs, depending on size.
  5. Chill and Set:

    • Place the fat bombs on the baking sheet or in the molds and refrigerate for at least 1-2 hours, or until they firm up.
    • If you’re in a rush, you can also freeze them for about 30 minutes to speed up the process.
  6. Serve & Store:

    • Once set, remove the fat bombs from the fridge or freezer and enjoy!
    • Store the fat bombs in an airtight container in the fridge for up to 1-2 weeks. They can also be frozen for longer storage.
